my journey to bake the perfect cake

Royal Icing

♥ Royal Icing

4 Tablespoons Meringue Powder
16 ounces Confectioner’s Powdered  Sugar
**6  Tablespoons Warm Water

Make certain your bowl and beaters/whip are completely grease free.

Beat all ingredients until stiff peaks form, **adding water a tablespoon at a time until you get the smooth whipped consistency.

This icing is excellent for piping delicate snowflakes and for outlining frosted cookies where you will “flood” outlined areas with thinned Royal Icing.

For flooding, or to make a thinner “flooding” icing, add lemon juice or other extract to flavour the Royal Icing recipe. Paste colouring can be added at this time, also.  This will thin the original recipe enough for flooding.

Keep the icing bowl covered with plastic wrap when not in use so the top won’t harden. Whip the icing from time to time if you’re making a large amount or have an ongoing project.
